Massaged Kale Salad with Avocado Lime Dressing


2 large bunches of kale
1 cup shredded red cabbage
1 cup shredded broccoli salad mix
½ bunch chopped cilantro
½ cup chopped scallions
1/4 cup organic extra virgin olive oil
2 tablespoons sprouted pumpkin seeds
Shaved Asiago cheese, to taste (optional)

1 hass avocado
1/4 cup organic extra virgin olive oil
3 limes, juiced
Italian herbs salt, to taste

Wash and dry kale. Strip leaves from the stems, chop into small pieces, and place in a large bowl. Add olive oil and massage kale with clean hands. Within 5-10 minutes of the olive oil penetrating the kale, it will become soft, dark, and shiny. Add shredded cabbage, broccoli salad mix, chopped cilantro, and scallions to bowl and combine.

In a separate small bowl, mash the avocado with a fork until soft. Stir in lime juice, olive oil, and Italian herbs salt. Add dressing to salad and mix well.

Top salad with sprouted pumpkin seeds and shaved asiago cheese should you desire. Serve salad alone with shredded chicken or grilled shrimp for a delicious well balanced meal.
